Their family has been in the food service industry for close to 40 years. The duo are taking their passion for the bold flavors, colors, and attitude of the southwestern food culture to new heights. Maria and her mother have developed a menu that feature top of the line ingredients in every dish. Their beef is grass-fed and organic, their seafood is wild caught, the pork is heritage, the chicken free range and the eggs organic. It’s this attitude that has inspired and created superior dishes. The menu features everything from Empanadas Ranchero with Spiced Beef and Potatao, Seared Shrimp with Chorizo Cream, Lobster Paella with Mayan Prawns, Roasted Corn Chowder with Charred Poblano Chili. Cactus Rose’s commitment and homage to the vibrant, bold, and clean flavors taken from the Mexican, Native American, and Southwestern traditions is evident in everything they do. The beverage program is just as thoughtful as the food, and is a cross cultural fusion consisting of Cuba Libres, fresh-squeezed juice Margaritas, Mojitos, and Caipirinhas. All of the drinks are handcrafted with fresh-squeezed lime juice and nothing comes out of a can. Over 50 premium tequilas are offered. Dark and amber beers are of the Mexican and artisan genre and wine comes in the straight grape varietal and the more dressed up Sangria style. Welcome to Cactus Rose of Wilton!

      The food is best described as authentic with a refined edge that trumps the typical flavorful Latino plates that can be found almost anywhere. It goes beyond flavor and the level of detail emphasizes the attention that is given to the entire experience. I absolutely loved it. From the food to the drinks, everything was over the top good. I will be going back. The shrimp dish I had was out of this world and the empanadas were like none I’ve had before. I’ve traveled to Argentina, Uruguay, Puerto Rico, Dominica Republic and these were hands down the best and most unique empanadas I’ve ever tried. Everything is done right and it really makes you appreciate great food from good food. 5 stars.

      Just had a look at the menu…sounds like the food is phenomenal. Love that they use Mayan Prawns in the Paella…that’s on a whole new level! Will be my next stop very soon. Could use some spicy empanadas in my life today!

      My favorite fish tacos ever. Really good food and drinks are awesome. Some of the best mojitos I’ve had in CT. Last time I was there I ordered the Coconut Shrimps and the Empanadas and you could order a few appetizers and make a meal out of it without any problem. I recommend the fish tacos. Really, really good. I’ve seen the paella and it looks outstanding. Highly recommend Cactus Rose.
